Why it works: Red currant and white currant share more aroma than cooks usually use. They rank in the top 8% of all ingredient pairs, and cooks put them together in 4 recipes. Both carry isoamyl acetate, which smells banana, pear. The science ↓
Red Currant Jelly
Ingredients
Directions
Prepare the juice
Combine red and white currants in a clean preserving pan.
Stir gently over medium heat until the juice flows freely.
Pour the mixture into a fine sieve and let it drain without pressure.
Pass the juice through a jelly bag or folded muslin.
Make the jelly
Weigh the juice and boil it rapidly for 15 minutes.
For each pound of juice, add 8 ounces of sugar and stir off the heat until dissolved.
Boil the jelly for an additional 8 minutes, skimming off any scum.
Pour the jelly into jars and let it cool.

What each ingredient does
- Red currants
- Provide most of the pectin and tart acidity that give the jelly its set and flavour.
- White currants
- Add extra juice and pectin while contributing a milder, lighter flavour.
- Sugar
- Sweetens the jelly and, with the acid and pectin, helps it set firm.
The step that matters
Boil the juice rapidly before adding sugar. A rapid boil evaporates water and concentrates the pectin and acid so the jelly can set. Adding sugar too early, or boiling too gently, can leave the jelly runny.
