Mushrooms in Brine

Ingredients

Directions

Prepare and brine

  1. Prepare mushrooms by removing the stems and measuring them.

  2. In a pot, boil 2 quarts of water with ½ pound of coarse sea salt, 2 teaspoons of white peppercorns, 2 blades of mace, and 1 piece of ginger for 5 minutes.

  3. Skim off any scum, then gently add the mushrooms and boil for another 5 minutes.

Bottle and seal

  1. Transfer the mushrooms to well-warmed, wide-necked bottles and let them cool completely.

  2. Pour a little salad oil on top of the cooled mushrooms.

  3. Cork the bottles with new corks.

  4. Cover the bottles with two layers of bladder.

Soak before use

  1. Soak the mushrooms in warm water until the brine is sufficiently extracted.

What each ingredient does

Mushrooms
Main ingredient that absorbs flavour from the brine as it is soaked out.
Coarse sea salt
Seasons the brine and helps preserve the mushrooms by drawing out moisture.
Salad oil
Forms a layer on top that keeps air away from the mushrooms in the bottle.
Ginger
Adds warm, aromatic flavour to the brine.

The step that matters

Cooling completely before oiling and corking. Mushrooms must be fully cool before oil and corks are added. Warm mushrooms in a sealed bottle release moisture that condenses and can encourage spoilage, so the cooling step protects the preserve.

Swap the mace

How well each one fits the dish's main ingredients (mushroom, ginger):

  1. Turmericfits better
  2. Clovefits better
  3. Garlicfits better

Fit is the average pairing score against mushroom, ginger. Candidates are from the same food group and used in at least 100 recipes.
