Why it works: Celery and carrot match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 10,173 recipes. Both carry myristicin, which smells spice, warm. The science ↓
Rabbit Soup X LA Reine
Ingredients
Directions
Prepare the rabbit
Wash and soak the rabbits thoroughly.
Place them whole in a soup pot and add 7 pints of cold water or veal broth.
Stew gently for about 45 minutes.
Remove the rabbits, take off the flesh from the backs and legs, and mince it finely.
Pound the minced meat into a smooth paste and cover it to keep it fresh.
Make the soup
Return the rabbit bodies to the pot along with onions, celery, carrots, savory herbs, mace, peppercorns, and salt.
Stew the mixture softly for 3 hours.
Strain the soup and let it settle, then pour off the clear liquid into a clean stewpan.
Gradually mix the hot liquid with the pounded rabbit flesh, adding it slowly to avoid lumps.
Season with pounded mace and cayenne to taste.
Pass the mixture through a coarse sieve.
Finish and serve
Return the soup to the stewpan, stir in the cream mixed with arrowroot when it boils, and add salt if needed.

What each ingredient does
- Rabbits
- Provide the meat that is pounded and blended to give the soup body and flavour.
- Cream
- Adds richness and a smooth, silky texture to the finished soup.
- Arrowroot
- Thickens the cream mixture so the soup becomes smoothly thicker when it boils.
- Onions
- Build savoury sweetness and aroma as the base flavouring of the broth.
- Celery
- Adds aromatic, savoury flavour to the stock as it simmers.
- Carrots
- Add gentle sweetness and colour to the broth.
The step that matters
Adding the hot liquid to the rabbit paste. Pouring the liquid in slowly while stirring lets the paste disperse evenly. Adding it all at once can leave lumps that do not smooth out, so the soup stays grainy instead of velvety.
Swap the mace
How well each one fits the dish's main ingredients (rabbit, veal, onion, celery, carrot, cream, arrowroot):
- Parsleyfits better
- Turmericfits better
- Thymefits better
- Macethe original
