What each ingredient does

Rice
Swells as it cooks, thickening the soup and giving it body.
Butter
Adds richness and a smooth mouthfeel to the finished soup.
Flour
Mixed with butter, it helps thicken the soup slightly.
Egg yolks
Enrich and thicken the soup when stirred in, adding creaminess.

The step that matters

Stirring in the egg yolks or butter-flour mixture. Adding egg yolks to hot soup can scramble them. Tempering with a little hot liquid first and keeping the soup below a boil helps them blend smoothly and thicken evenly.
