Baked Soles

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Wipe the cleaned soles dry and let them rest for at least one hour, wrapped in a clean cloth.

  2. Mix the liquefied butter with the beaten egg.

Coat the fish

  1. Brush the soles with the butter and egg mixture.

  2. Cover the fish with the seasoned bread crumbs.

Bake and serve

  1. Pour 1–2 teaspoons of liquid butter into a flat dish and place the fish in it.

  2. Sprinkle a little more butter on top and press the bread crumbs lightly with a knife.

  3. Bake in a preheated oven at 350°F (175°C) for about 20 minutes.

  4. Serve gently on the dish.

What each ingredient does

Soles
Provide the delicate white fish that is the main component of the dish.
Egg
Binds the butter to the fish so the bread crumbs adhere to the surface.
Butter
Adds moisture and richness and helps the crumb coating brown in the oven.
Bread crumbs
Form a crisp, golden coating that keeps the delicate fish moist underneath.

The step that matters

Pressing the bread crumbs lightly. Firm but gentle pressure helps the crumbs bond to the butter and egg layer so the coating stays in place while baking. Pressing too hard can compact the crumbs and make the coating dense, while loose crumbs may fall off in the oven.
