A Rich English Brown Gravy

Ingredients

Directions

Brown the meat

  1. Brown the diced ham lightly in a pan and remove it.

  2. Fry the neck of beef in the same pan until browned, then add it back with the ham.

  3. Add the shallots or onion and brown gently.

Simmer and strain

  1. Pour in the boiling water or broth and bring to a boil, skimming off any scum.

  2. Add salt, cloves, mace, peppercorns, herbs, carrot, and celery.

  3. Boil gently until reduced to about 1 pint, then strain and let cool to remove fat.

  4. Reheat, adjusting seasoning with salt and flavorings as needed.

What each ingredient does

Neck of beef
Browned meat that releases flavor and gelatin into the gravy as it simmers.
Lean ham
Adds savory, salty depth to the stock as it browns and cooks.
Shallots or onion
Browning them gently adds sweetness and savory base flavor to the gravy.

The step that matters

Skimming the boiling liquid. Scum rising when the water or broth first boils can cloud the gravy and taste bitter. Removing it early keeps the final gravy clear and clean-flavored.

Swap the mace

How well each one fits the dish's main ingredients (ham, beef, flour, pepper, shallot, clove, carrot):

  1. Parsleyfits better
  2. Marjoramfits better
  3. Thymefits better
  4. Macethe original

Fit is the average pairing score against ham, beef, flour, pepper, shallot, clove, carrot. Candidates are from the same food group and used in at least 100 recipes.
