Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Vegetable marrow
Forms the body of the sauce and, once softened and sieved, gives it a smooth, thick texture.
Veal broth or pale gravy
Supplies the liquid that stews the marrow and gives the sauce its savoury depth.
Rich cream
Stirred in at the end to add richness, a silkier mouthfeel and mellowing of flavour.
Mild onion
Stews down with the marrow to add a gentle aromatic background flavour.

The step that matters

Press the mixture through a fine sieve. Sieving breaks down the stewed marrow fibres and removes any stringy or coarse bits, so the sauce comes out smooth rather than grainy or lumpy.
