Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet chestnuts
Form the body of the sauce, thickening it as they break down when pressed through a sieve.
Veal gravy
Provides the liquid base and savoury meaty flavour for the sauce.
Rich cream
Adds richness and a smooth, silky texture to the finished sauce.

The step that matters

Keep stirring once the cream is added. Cream can curdle or scorch if it sits over heat without stirring. Stirring keeps it evenly heated and smooth as the sauce comes to a boil.

Swap the mace

How well each one fits the dish's main ingredients (chestnut, veal, lemon, pepper, cream):

  1. Sagefits better
  2. Parsleyfits better
  3. Tarragonfits better
  4. Macethe original

Fit is the average pairing score against chestnut, veal, lemon, pepper, cream. Candidates are from the same food group and used in at least 100 recipes.
