Shape and store

  1. If serving cold, mold the butter into small shapes and turn them out.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Anchovies
Provide the salty, savory flavor that defines the butter.
Butter
Carries the flavorings and gives a smooth, rich body that sets firm when cold.
Nutmeg
Adds warm, aromatic spice that complements the anchovy and butter.
Mace
Adds a delicate, aromatic spice similar to nutmeg but lighter.

The step that matters

Rub the mixture through a fine sieve. Pounding alone leaves fibers and small bones in the flesh. Pressing it through a fine sieve breaks them down and removes them, producing the smooth texture the butter needs once blended with the fat.

Swap the mace

How well each one fits the dish's main ingredients (butter, pepper, nutmeg, rose):

  1. Cinnamonfits better
  2. Cardamomfits better
  3. Allspicefits better
  4. Macethe original

Fit is the average pairing score against butter, pepper, nutmeg, rose. Candidates are from the same food group and used in at least 100 recipes.
