Spiced Beef

Ingredients

Directions

Cure the beef

  1. Rub the beef with brown sugar and let it sit for 3 days.

  2. After 3 days, add fine salt and rub it in, turning the beef once every 24 hours for 12 days.

  3. Wash the beef but do not soak it; skewer or bind it into shape.

Cook

  1. Place the beef in a stewpan and add beef broth.

  2. Bring to a boil, skimming off any scum.

  3. Add the onion, thyme, parsley, and carrots.

  4. Simmer gently for 4.5 hours.

  5. If not serving hot, leave the beef in its broth until nearly cold.

What each ingredient does

Beef
Forms the main body of the stew, becoming tender during long, gentle simmering.
Brown sugar
Adds sweetness and helps balance the salt in the cure.
Fine salt
Draws out moisture and seasons the beef during the long cure.
Beef broth
Provides moisture and savory beef flavor for the simmering liquid.
Carrots
Add sweetness and earthy flavor to the broth as they cook.

The step that matters

Simmer gently for 4.5 hours. Keeping the liquid at a gentle simmer, not a rapid boil, lets the tough connective tissue in the beef break down slowly, so the meat becomes tender without tightening or drying out.

Swap the mace

How well each one fits the dish's main ingredients (beef, pepper, clove, nutmeg, sugar, onion, thyme):

  1. Allspicefits better
  2. Cinnamonfits better
  3. Marjoramfits better
  4. Macethe original

Fit is the average pairing score against beef, pepper, clove, nutmeg, sugar, onion, thyme. Candidates are from the same food group and used in at least 100 recipes.
