Smoke and serve

  1. Hang the tongue to drain, wrap it in brown paper, and smoke it over a wood fire for 2 to 3 weeks.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Saltpetre
Preserves the meat and gives it a pink cured colour.
Coarse sea salt
Draws out moisture and seasons the tongue during the long cure.
Coarse sugar
Balances the salt and feeds flavour development during curing.
Treacle
Adds sweetness and a dark, rich colour to the pickled surface.
Juniper berries
Adds a resinous, aromatic flavour to the cured meat.

The step that matters

Rub the mixture thoroughly onto the tongue. Cure only penetrates where it touches the meat, so uneven coverage leaves spots unprotected and unevenly seasoned during the long cure.
