Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Loin of pork
Forms the main body of the dish and provides the meat that cooks through under the broiler.
Egg
Binds the bread crumb coating to the cutlet surface when the optional coating is used.
Bread crumbs
Form a crisp, browned coating on the outside of the cutlets during broiling.
Minced sage
Adds an aromatic herb flavour to the bread crumb coating.

The step that matters

Broil the cutlets for 15 to 18 minutes. Cutlets cut ½ inch thick cook quickly, so overcooking can dry out the lean meat. Watching the time and fire keeps the pork juicy while the surface browns.

Swap the sage

How well each one fits the dish's main ingredients (pork, pepper, egg, bread):

  1. Parsleyfits about as well
  2. Marjoramfits about as well
  3. Sagethe original
  4. Nutmegfits about as well

Fit is the average pairing score against pork, pepper, egg, bread. Candidates are from the same food group and used in at least 100 recipes.
