Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Lean meat that gives the patties a tender, mild body once chopped and seasoned.
Lean pork
Adds meaty flavour and body to the patties.
Inside fat of the pig
Supplies fat that keeps the patties moist and juicy during cooking.
Coarse sea salt
Seasons the meat and helps draw out proteins that bind the mixture together.
Black pepper
Adds a sharp, aromatic bite that seasons the meat throughout.
Flour
Dusting on the cakes helps them form a light crust and brown when fried.

The step that matters

Chopping the mixture again until evenly seasoned. Uneven chopping leaves pockets of salt and spice, so some bites taste bland and others too strong. Thorough mixing spreads the seasoning and fat evenly through the meat.

Swap the mace

How well each one fits the dish's main ingredients (veal, pork, pepper, nutmeg, flour, butter):
