What each ingredient does

Turkey
Forms the main meat that is roasted whole and carved for serving.
Forcemeat or sausage meat
Adds rich, savoury flavour and moisture to the breast as it cooks.
Butter
Adds fat for basting, helping the skin brown and the surface stay moist.
Lemon rind
Adds bright, fragrant aroma that lifts the rich meat and stuffing.
Mace
Contributes warm, aromatic spice flavour to the filling.
Cayenne pepper
Adds gentle heat that sharpens the savoury flavour of the filling.

The step that matters

Covering the breast with buttered paper. The breast is leaner and cooks faster than the legs, so it dries out first. The buttered paper shields it from direct heat, and removing it near the end lets the surface brown.

Swap the mace

How well each one fits the dish's main ingredients (turkey, meat, lemon, pepper, butter, bread, sauce):

  1. Thymefits better
  2. Parsleyfits better
  3. Sagefits better
  4. Macethe original
