Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chestnuts
Provide the main body and starchy, mild flavor of the dish.
Beef or veal gravy
Supplies the liquid and savory flavor that the chestnuts absorb as they stew.
Butter
Browns the chestnuts lightly, adding color and a toasty, nutty flavor.

The step that matters

Stewing until tender but unbroken. Chestnuts soften as starch gelatinizes with heat, but prolonged vigorous boiling or stirring breaks the cell walls and turns them to mush. Gentle, steady heat keeps them intact.

Swap the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (chestnut, beef, pepper, butter, ham):

  1. Lemonthe original
  2. Figfits about as well
  3. Cherryfits less well
  4. Limefits less well

Fit is the average pairing score against chestnut, beef, pepper, butter, ham. Candidates are from the same food group and used in at least 100 recipes.
