Creamed Tartlets

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Line pattypans with very fine paste.

  2. Put pastry cream into each lined pattypan.

  3. Whisk the egg whites to a stiff froth.

  4. Mix sifted sugar with the egg whites.

  5. Lightly spread the icing over the tartlets.

  6. Bake in a gentle oven at 350°F (175°C) for 20 to 30 minutes, adjusting time for smaller tartlets.
