Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the custard base

  1. Pour boiling milk over the bread crumbs and butter in a bowl.

  2. Cover and let stand until the bread is well soaked.

  3. Stir in sugar, egg yolks, candied orange rind, and nutmeg until combined.

  4. Once the mixture is nearly cold, pour it into a baking dish.

Top and bake

  1. Top with beaten egg whites mixed with sifted sugar.

  2. Bake in a moderate oven at 350°F (175°C) for 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread crumbs
Absorb the milk and set into a soft, tender body as the pudding bakes.
Eggs
Bind the pudding and set it into a custard, while the whites lighten the topping.
Egg whites
Whipped to a firm froth, they puff up and bake into a light, airy topping.
Milk
Soaks the bread and provides the liquid that the eggs set in.
Sugar
Sweetens the pudding and helps the beaten whites hold their structure.
Butter
Adds richness and fat, softening the crumb and adding flavour.

The step that matters

Let the mixture cool before pouring it into the dish. If the milk and egg mixture is still very hot when the eggs are added, they can scramble rather than blend smoothly, so cooling it nearly fully helps keep the custard smooth.

Swap the orange

How well each one fits the dish's main ingredients (bread, butter, milk, sugar, egg, nutmeg):

  1. Vanillafits better
  2. Figfits better
  3. Raisinfits better
  4. Orangethe original

Fit is the average pairing score against bread, butter, milk, sugar, egg, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
