Rhubarb Isinglass Jelly

Ingredients

Directions

Prepare the rhubarb

  1. Wash and slice the rhubarb without peeling, removing any coarse or discolored parts.

  2. In an enamelled stewpan, combine the rhubarb and water, then add the sugar.

  3. Boil gently for 20 minutes until the rhubarb is stewed but not thickened.

  4. Strain the mixture through a muslin cloth folded in four to obtain the juice.

Make the jelly

  1. Measure 1½ pints of the rhubarb juice and heat it in a clean pan.

  2. Add the isinglass and large lumps of sugar, stirring until the isinglass is fully dissolved.

  3. Boil quickly for a few minutes to remove scum, then carefully clear it off.

  4. Strain the jelly twice through the muslin cloth, let it cool, and mold as desired.

What each ingredient does

Rhubarb
Provides the tart flavour and pink colour that define the jelly.
Isinglass
Gelatine-like protein that sets the clear juice into a firm jelly when cooled.
Sugar
Sweetens the juice and balances the rhubarb's sharp acidity.

The step that matters

Boil quickly to remove scum, then clear it off. Isinglass must be fully dissolved before boiling, and skimming scum carefully keeps the jelly clear. Scum left in the liquid clouds the finished jelly and can spoil its appearance.
