A Meringue Op Rhubarb, or Green Gooseberries

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the rhubarb base

  1. Combine the rhubarb and powdered sugar in a saucepan.

  2. Cook gently until it forms a smooth pulp.

  3. Increase the heat and boil until the mixture is thick and dry.

  4. Remove from heat and let it cool completely.

Top and bake

  1. Whisk the egg whites until frothy and stiff peaks form.

  2. Spread the meringue over the cooled rhubarb mixture.

  3. Bake in a preheated oven at 400°F (200°C) until the meringue is lightly browned.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rhubarb
Provides the tart base flavor and, once cooked down, the main body of the filling.
Powdered sugar
Sweetens the rhubarb and helps it break down into a thick, dry pulp.
Egg whites
Whipped into stiff peaks to form the meringue topping that sets and browns in the oven.

The step that matters

Boil the rhubarb until thick and dry. The mixture must lose enough water before it cools, or it will be too wet and soak into the meringue, leaving the topping soggy and unstable.

Swap the rhubarb

How well each one fits the dish's main ingredients (sugar, egg):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Rhubarbthe original
  4. Gingerfits about as well

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
