What each ingredient does

Rhubarb
Provides the tart flavour and the fruit body that the jam is made from.
Sugar
Sweetens the jam and, as it dissolves, draws out juice and helps it set.

The step that matters

Boil rapidly for about 30 minutes, stirring well. Sugar and fruit must reach a rapid boil long enough to thicken. Stirring prevents scorching on the bottom of the pan, which would give the jam a burnt taste.
