What each ingredient does

Strawberries
Provide the fruit, pectin and flavor that form the jam's body and taste.
Sugar
Sweetens the jam and helps it set into a thick, spreadable texture.

The step that matters

Boiling the mixture quickly after adding sugar. Sugar added off the heat must then be boiled vigorously to dissolve fully and concentrate the mixture. Insufficient boiling can leave the jam runny because the set does not form properly.
