What each ingredient does

Mushroom buttons
Provide the main body of the pickle, absorbing the brine's flavour as they simmer.
White wine vinegar
Supplies the acidity that gives the pickle its sharp, preserving character.
Coarse sea salt
Seasons the brine and helps draw flavour into the mushrooms.
Ginger
Adds a warm, aromatic spiciness to the brine.

The step that matters

Simmering the mushrooms. Simmering for the stated 10 minutes cooks the mushrooms through and lets the spices release their flavour into the vinegar before cooling. Too short a simmer leaves the mushrooms raw and the brine weakly seasoned.
