What each ingredient does

Mushrooms
Are the main item; they release flavour and brine into the liquid as they cook and soak.
Coarse sea salt
Seasons the liquid and draws moisture and flavour out of the mushrooms through osmosis.
White peppercorns
Add a mild, sharp aroma to the brine as they steep in the hot water.

The step that matters

Pour a little salad oil on top. The oil layer seals the surface from air, which limits contact with oxygen and helps slow spoilage while the mushrooms stand in the brine.

Swap the mace

How well each one fits the dish's main ingredients (mushroom, ginger):

  1. Turmericfits better
  2. Clovefits better
  3. Garlicfits better
  4. Macethe original

Fit is the average pairing score against mushroom, ginger. Candidates are from the same food group and used in at least 100 recipes.
