Ham

Ingredients

Directions

  1. Cut off the skin of the soaked ham and spit it.

  2. Insert 2-3 cloves into the shank.

  3. Rub the ham with Madeira wine and prick the underside with a knife.

  4. Cover the ham with a paste, then with paper, and tie it up.

  5. Once cooked, remove the paste and quickly rub the ham with egg.

  6. Sprinkle bread crumbs over the ham and baste with butter.

  7. Continue sprinkling crumbs until a crust forms and it turns brown.

  8. Place the ham on a dish, garnish the bone with paper, and pour Sauce Espagnole with Madeira underneath.
