Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbreads
Main protein, which turns tender and delicate when blanched and then roasted.
Egg
Binds the bread crumbs so they adhere to the sweetbreads as they roast.
Bread crumbs
Form a crisp, golden browned crust during roasting.
Clarified butter
Adds richness and promotes even browning of the crumb coating.
Lemon juice
Adds acidity that brightens the butter sauce.

The step that matters

Blanching the sweetbreads. Blanching in boiling salted water firms the tissue and sets the surface so it can be trimmed and dried cleanly. Cooling quickly stops further cooking and keeps the texture delicate. Skipping the dry step leaves moisture that stops the egg and crumbs from sticking and browning well.
