Blanquette of Chicken with Cucumbers

Ingredients

Directions

  1. Clarify some butter in a sauté pan.

  2. Place the chicken fillets skin-side down on a table.

  3. Remove the inner fillet, cut it into small pieces (about the size of a coin), and add them to the butter.

  4. Cook over high heat for 1 minute, stirring constantly, then set aside to let the butter drain.

  5. Trim the chicken neatly and place it in béchamel sauce.

  6. Peel and seed the cucumbers, then cut them into pieces the size of a coin.

  7. Fry the cucumber pieces until they are a light golden brown.
