What each ingredient does

Pigeons
Provide the main meat, which becomes tender after marinating and browns when fried.
Flour
Forms a dry coating that browns during frying and helps the surface crisp.
Lard
Conducts heat for frying and adds richness and browning to the surface.
Lemon juice
Acid in the marinade that helps tenderise the meat and adds brightness.
Tarragon vinegar
Adds sharp acidity and aroma to the finished butter sauce.

The step that matters

Fry the pigeons until golden brown and cooked through. Floured pieces brown quickly and can burn on the outside before the thick meat near the bone is cooked. Keeping the heat moderate lets the coating colour evenly while the interior reaches a safe, tender doneness.

Swap the lemon

Fit is the average pairing score against vinegar, clove, garlic, carrot, onion, parsley, flour. Candidates are from the same food group and used in at least 100 recipes.
