Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Onions
Browned and strained, they give the sauce its main flavour and body.
Espagnole sauce
Provides the rich, savoury brown base that the onions are built into.
Butter
Fat that helps the onions brown gently and carries their flavour.
Plain sauce
Added in smaller amount to thin and mellow the sauce's body.
Lemon juice
Adds acidity that brightens the rich, savoury sauce just before serving.

The step that matters

Stir until the onions are light brown. Onions colour through the Maillard reaction and caramelisation, which build savoury depth. Pale onions taste raw and flat, while over-browned ones turn bitter, so stir steadily and watch the colour.
