Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Truffles
Provide the main flavour and aroma of the sauce.
Butter
Carries the truffle aroma and gently cooks the truffles without browning them.
Consommé
Adds savoury liquid that is reduced to concentrate the flavour.
Béchamel sauce
Forms the creamy body of the sauce, giving it thickness and mouthfeel.
Lemon juice
Adds a touch of acidity that brightens the rich, buttery flavour.

The step that matters

Simmering the consommé until nearly dry. Reducing the liquid concentrates the flavour. If it is left too wet, the sauce tastes thin and diluted once the béchamel is added. If it is reduced too far, it scorches and turns bitter.
