Lobster Sauce

Ingredients

Directions

  1. Pound the spawn or coral of the lobster with a bit of butter in a mortar.

  2. Rub it through a fine sieve.

  3. In a saucepan, combine the butter sauce and the lobster spawn; heat until very hot and smooth.

  4. If not smooth, pass it through a tammy.

  5. Add the lobster meat cut into small squares; heat thoroughly.

  6. Squeeze in a little lemon juice and serve in a sauce boat.
