Prepare the cucumbers

  1. Taste each end of the cucumbers to ensure they are not bitter.

  4. Heat clarified butter in a pan.

  5. Fry the cucumbers in the butter until lightly colored, turning occasionally.

  6. Drain the cucumbers on a sieve to remove excess butter.

Stew and serve

  1. Place the drained cucumbers in a stewpan.

  2. Cover the cucumbers with consommé.

  3. Add a pinch of sugar and salt.

  4. Cover with a round paper.

  6. Drain the cucumbers again on a sieve.

  7. Arrange the cucumbers on a serving dish.

  8. Pour over a cream sauce made with the egg yolk and a little cream.

  9. Serve very hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cucumbers
Form the main body of the dish, becoming tender while keeping their shape during stewing.
Clarified butter
Browns the cucumber surfaces and adds rich fat flavor during frying.
Consomme
Supplies savory liquid that the cucumbers absorb and stew in.
Egg yolk
Thickens the cream sauce into a smooth, coating custard-like texture.
Cream
Adds richness and moisture to the sauce, softening its flavor.

The step that matters

Stew gently until nearly dry. Gentle heat lets the cucumbers soften and absorb the consommé without breaking down. Stopping when nearly dry concentrates flavor and prevents a watery dish.
