Veal Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Braise the veal

  1. Cut the veal into collops.

  2. Stir the collops in a skillet with butter over medium heat until they begin to brown.

  3. Add enough water to cover the veal, along with pepper and salt.

  4. Let the mixture stew until the veal is tender.

  5. Remove the veal from heat.

  6. Let the veal cool.

Assemble and bake

  1. Prepare a pie with puff pastry.

  2. Layer the veal, ham slices, hard-boiled egg yolks, and half of the veal gravy in the dish.

  3. Cover the filling with pastry.

  4. Trim the pastry neatly.

  5. Decorate the top with a star of leaves.

  6. Brush the pastry with egg wash.

  7. Bake at 400°F (200°C) until golden brown.

Serve

  1. Heat the remaining gravy with a little butter.

  2. Pour the heated gravy into the pie before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Provides the main meat, which becomes tender and flavorful when stewed slowly in water.
Butter
Adds fat and richness and helps the veal begin to brown in the skillet.
Hard-boiled egg yolks
Add richness and a creamy texture to the filling.
Puff pastry
Forms a flaky, crisp crust that puffs and browns in the oven.
Ham
Adds savory, salty flavor to the filling.

The step that matters

Let the veal stew until tender. Veal is lean and connective tissue breaks down only with long, gentle simmering. Stopping early leaves the meat tough and chewy inside the pie.
