Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Prepare a timbale paste and lay it in a round or oval tart pan.

  2. Brush the paste with egg and prick it all over.

  3. Bake at 400°F (200°C) until golden.

  4. Fill the baked shell with apple puree.

  5. Top with beaten egg whites and bake until set.

  6. Serve hot.
