Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the cream as they set and add richness to the custard.
Cream
Provides the fat and body that make up the custard.
Isinglass
Gelatin-like setting agent that firms the cooled cream.

The step that matters

Add the egg yolks to the warm cream. Egg yolks thicken when heated gently. If the cream is too hot when they go in, they can scramble and leave a grainy texture, so add them gradually and keep the heat low.
