Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the almonds

  1. Blanch the Jordan and bitter almonds, then soak them in cold water.

  2. Remove all spots, dry the almonds well, and pound them as fine as possible.

Make the batter

  1. In a bowl, mix the ground almonds with the powdered sugar and rose water.

  2. Beat the egg whites until stiff and smooth, then gently fold them into the almond mixture.

Shape and bake

  1. Drop small amounts of the mixture onto sheets of paper.

  2. Bake in a cool oven at 300°F (150°C) until set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Almonds
Provide the bulk and nutty, slightly bitter flavor of the biscuit.
Egg whites
Whipped to stiff foam, they give the biscuits lightness and help them set in the oven.
Powdered sugar
Adds sweetness and dissolves finely into the almond paste for a smooth texture.

The step that matters

Folding in the egg whites. Whipped egg whites hold air that makes the mixture light. Folding gently keeps that air in; stirring hard deflates the foam and produces dense, flat biscuits.
