Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. Mix the meat, gravy, pepper, salt, essence of anchovy, and parsley thoroughly.

Assemble the pies

  1. Line tartlet or patty pans with short crust pastry.

  2. Fill the pans with the prepared meat mixture and cover with pastry. Decorate the tops.

Glaze, bake and serve

  1. Brush with beaten egg.

  2. Bake at 400°F (200°C) for 20 to 30 minutes.

  3. Serve hot on a dish covered with a napkin.

What each ingredient does

Cooked meat
Forms the bulk of the filling and provides the savoury flavour of the pie.
Strong gravy
Adds moisture and savoury depth so the filling does not dry out in the oven.
Egg
Beaten egg brushed on the pastry gives a glossy, golden browned surface.
