Why it works: Carrot and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 8,053 recipes. Both carry 2,4-decadienal, which smells seaweed. The science ↓

What each ingredient does
- Ox-tail
- Provides the meat and gelatinous body that gives the soup its rich flavour and mouthfeel.
- Onion
- Adds savoury sweetness and aroma as it softens and flavours the stock.
- Carrot
- Contributes natural sweetness and body to the stock during long simmering.
- Turnip
- Adds mild sweetness and earthy flavour to the stock as it cooks.
The step that matters
Skim the surface after adding salt. Proteins and fat rise and coagulate as the stock heats, forming scum that can cloud the broth and taste greasy if not removed.
Swap the mace
How well each one fits the dish's main ingredients (carrot, turnip, onion, clove, parsley, celery):
