  1. In a stewpan, combine stock, carrot, aromatic seasoning, parsley, onion, bay leaf, celery (or celery-seed), bacon rind, salt, and cayenne.

  2. Simmer for about 1 hour, then strain the stock.

  3. Half an hour before serving, heat the strained stock in a fresh stewpan.

  4. Taste the soup and adjust seasoning if necessary.

  5. Add sherry and serve in a tureen.
