What each ingredient does

Stale bread
Forms the body of the pudding, soaking up custard as it steams.
Eggs
Set the custard as it steams, giving the pudding a firm, sliceable texture.
Milk
Forms the liquid base of the custard and keeps the pudding moist.
Butter
Adds richness and helps the bread layers brown and taste savoury-sweet.
White sugar
Adds sweetness that balances the lemon and the set custard.

The step that matters

Steaming gently. Egg custard turns grainy or watery if it boils or cooks too fast, because the proteins tighten and squeeze out liquid. A gentle steam lets the eggs set evenly through the bread.

Swap the lemon

How well each one fits the dish's main ingredients (bread, butter, sugar, milk, egg):

  1. Vanillafits better
  2. Figfits better
  3. Peachfits about as well
  4. Lemonthe original

Fit is the average pairing score against bread, butter, sugar, milk, egg. Candidates are from the same food group and used in at least 100 recipes.
