What each ingredient does

Turbot fillets
Provide the flaky, delicate white flesh that forms the body of the dish.
Butter
Conducts heat evenly in the pan and adds richness and gentle browning to the fish.

The step that matters

Turning the fillets at half cooked. Turning fish once, when it has set and released from the pan, keeps it intact and gives an even golden surface. Turning too early can tear the delicate flesh.
