What each ingredient does

Flour
Forms the gluten-based structure that holds the dough and dumplings together.
Baking powder
Releases gas during cooking so the dough rises and becomes light.

The step that matters

Knead the dough quickly with floured hands. Kneading briefly develops just enough gluten to hold the dough together. Overworking it makes the dough tough and dense, so the bread loses its lightness.
