Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main protein, which firms and turns opaque as it cooks through.
Mushrooms
Add savory, earthy flavor and moisture as they release their liquid while cooking.
Onion
Adds sweetness and aromatic depth as it softens into the pan.
Chicken broth
Supplies liquid for simmering, moistening the chicken and building savory flavor.

The step that matters

Browning the chicken pieces. Searing the chicken on all sides before simmering creates browned flavor through the Maillard reaction. Pieces that are crowded or wet will steam instead of browning, so they lose that flavor.

Swap the onion

How well each one fits the dish's main ingredients (chicken, mushroom, pepper, butter):

  1. Capsicumfits better
  2. Potatofits better
  3. Tomatofits about as well
  4. Onionthe original

Fit is the average pairing score against chicken, mushroom, pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
