Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Carrots
Main vegetable; cooking softens its fibres until tender, and the sugar and reduced stock give it a glaze.
Stock
Liquid that cooks down with the sugar and butter into a glaze that coats the vegetables.
Castor sugar
Adds sweetness and helps the reduced liquid caramelise into a glaze.
Butter
Adds fat and richness, helping the reduced liquid form a glossy coating.

The step that matters

Boil without a lid until reduced to a glaze. Uncovered boiling lets water evaporate so the stock, sugar and butter thicken and cling to the carrots. With a lid on, the liquid stays thin and the glaze does not form. Watch closely near the end so the sugar does not scorch.
