What each ingredient does

Semolina
Thickens the milk as it heats, giving the pudding its body.
Egg
Sets the pudding when baked, giving it a firm, custard-like structure.
Milk
Forms the liquid base that the semolina thickens and the egg sets.
Moist sugar
Adds sweetness and moisture to the egg mixture.

The step that matters

Cooling before adding the egg. If the hot semolina mixture is added to the egg without cooling slightly, the egg can scramble, which would leave the pudding grainy instead of smooth.

Swap the nutmeg

How well each one fits the dish's main ingredients (milk, semolina, egg, sugar, butter):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Capersfits less well
  4. Parsleyfits less well

Fit is the average pairing score against milk, semolina, egg, sugar, butter. Candidates are from the same food group and used in at least 100 recipes.
