To Make Yeast Bread Quickly

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the dough

  1. In a large pan, combine the flour and salt.

  2. Mix the German yeast with the tepid water until smooth, leaving no lumps.

  3. Strain the yeast mixture into the flour and knead the dough until well combined.

  4. Cover the dough with a cloth and let it rise in a warm place for 2 hours.

  5. Once doubled in size, turn the dough onto a floured board and knead in enough flour to prevent sticking.

Shape and bake

  1. Divide the dough into 4 or 6 loaves and place them in tins.

  2. Let the loaves rise for another 20 minutes in a warm spot.

  3. Bake in a preheated oven at 350°F (175°C) for 1.5 to 2 hours.

Explore the science

What each ingredient does

Flour
Provides the structure that the kneaded dough and its gluten network depend on.
German yeast
Produces gas as it ferments, making the dough rise and become light.
Tepid water
Hydrates the flour and dissolves the yeast so it can become active and form gluten.

The step that matters

Letting the dough double before shaping. Yeast needs time and warmth to produce enough gas for the dough to rise. Shaping or baking too early yields dense loaves, while the dough needs to be doubled in size before it is divided.
