Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal knuckle
Long simmering releases gelatin and savory flavor into the stock, giving the soup body.
Onions
Rubbed through the strainer, they thicken the soup and contribute sweetness and deep flavor.
Flour
Mixed with water and stirred in, it thickens the stock into a smoother, fuller soup.

The step that matters

Adding the flour mixture. Flour must be mixed smoothly with water first and then stirred into boiling liquid. Added dry or in lumps, it clumps and thickens unevenly.

Swap the mace

How well each one fits the dish's main ingredients (veal, onion, turnip, parsnip, celery, pepper, sugar):

  1. Parsleyfits better
  2. Thymefits better
  3. Marjoramfits better
  4. Macethe original

Fit is the average pairing score against veal, onion, turnip, parsnip, celery, pepper, sugar. Candidates are from the same food group and used in at least 100 recipes.
