Haricot Mutton

Ingredients

Directions

  1. Cut the mutton into neat pieces, about 2 inches square.

  2. In a stew pan, heat the dripping until it begins to smoke.

  3. Slice the large onion and fry it in the hot dripping until very brown.

  4. Add the mutton pieces and fry until browned, removing them as they are done.

  5. Pour out the dripping, leaving the onions in the pan.

  6. In a small bowl, mix the flour, salt, and pepper with 1½ cups of water.

  7. Stir well and pour the mixture into the pan with the onions.
