Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bones
Release gelatin and savoury flavour into the water during long simmering, giving the broth body.
Grain or sliced fresh vegetables
Swell or break down during cooking to thicken the soup and add substance.
Milk
Adds richness and a creamy, whitened colour to the soup when used for a white version.

The step that matters

Remove the layer of fat. Fat that cools onto the surface of the broth can make the soup greasy and heavy. Chilling and skimming it off gives a cleaner taste and clearer broth.

Swap the onion

How well each one fits the dish's main ingredients (carrot, turnip, celery, semolina, milk):

  1. Leekfits better
  2. Parsnipfits better
  3. Arrowrootfits better
  4. Onionthe original

Fit is the average pairing score against carrot, turnip, celery, semolina, milk. Candidates are from the same food group and used in at least 100 recipes.
