Egg Cutlets

Ingredients

Directions

Prepare the cutlets

  1. Cut the hardboiled eggs in half lengthwise.

  2. Prepare a seasoned mixture of salmon or cold meat and paste it on each half of the egg to make it look whole.

  3. Press the halves together firmly, then dip in the uncooked egg and coat with breadcrumbs.

Fry and serve

  1. Fry the egg cutlets in Hugon’s suet until golden brown.

  2. Mash the potatoes through a sieve and form a wall of potatoes on a serving dish.

  3. Arrange the cutlets in a circle on the potatoes and garnish with a bunch of cress in the center.

What each ingredient does

Hardboiled eggs
Form the whole-looking centre of each cutlet, giving the dish its body and structure.
Salmon or cold fish or meat
Provides the seasoned filling that is pasted onto the egg halves.
Mashed potatoes
Form a soft, starchy base that holds the cutlets and gives a smooth texture.
Uncooked egg
Acts as a binder so the breadcrumbs adhere to the cutlets.
Breadcrumbs
Form a crisp, golden coating when fried.

The step that matters

Press the egg halves together firmly. If the halves are not pressed firmly, the filling can separate and the coating may open during frying. A firm seal, followed by a full egg wash, keeps the cutlet intact while the breadcrumbs brown.

Swap the potato

How well each one fits the dish's main ingredients (egg, salmon, pepper):

  1. Asparagusfits better
  2. Chivefits better
  3. Capsicumfits better
  4. Potatothe original

Fit is the average pairing score against egg, salmon, pepper. Candidates are from the same food group and used in at least 100 recipes.
