Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bananas
Provide the main fruit flavour and soft body to the cream layers.
Cream
Adds richness and a light, airy texture when whipped.
Gelatin
Sets the cream mixture so the layers hold their shape when unmolded.
Calves' foot jelly
Forms a firm, set base layer that supports the banana cream.
Castor sugar
Sweetens the bananas and helps draw out their flavour.

The step that matters

Adding the dissolved gelatin to the cream mixture. Gelatin must be fully dissolved and mixed in evenly before it begins to set. Lumps or uneven distribution give weak spots and a patchy set, so the cream may not hold its shape when unmolded.

Swap the banana

How well each one fits the dish's main ingredients (cream, gelatin, sugar):

  1. Vanillafits better
  2. Strawberryfits better
  3. Raspberryfits about as well
  4. Bananathe original

Fit is the average pairing score against cream, gelatin, sugar. Candidates are from the same food group and used in at least 100 recipes.
